Food Challenge

I did pretty good with the Food Challenge this week. I only bought an occasional iced tea or soda and lunch on Friday. I had to buy lunch then because the floor in our break room was being cleaned and waxed, making the only refrigerator in the building inaccessible.

Here is something I am trying in order to get away from drinking soda and also to drink cold tea in the summer. I just cannot stand drinking hot tea right now.

Well, here are my meals for the next week:

- Oatmeal, raisins, almond milk, flaxseeds, and honey, 6 servings

- Gluten free pasta salad with tuna, 2 servings

- Poverty meal (a.k.a. beefaroni) with elbow macaroni, ground beef, tomatoes, tomato sauce, spices, onion

I don't know why they call it poverty meal, because I have been eating stuff like that nearly all my life.

    That poverty meal sounds yummy and also sort of like hamburger helper without the chemicals. I think I'll try that this week since I have some macaroni that needs using up, half a large onion and some tomatoes. Of course I'll tweak it to what I have on hand, but I'm sure it'll be just as yummy.

    Your "poverty" meal reminds me of my late MIL's advice on frugal living: eat chili! I've always eaten chili instead of steak -- didn't seem like earth-shaking advice! (But she meant well!)
